Evenyone knows that Ratatouille is about the cute little rat that can cook... hehe.. but do you know that Ratatouille is actually the name of a French dish? well it's actually a French mixed vegetable stew...
recently fell for cooking although i cant eat (dit program)... bought this recipe book which i think is helpful...
i tried this last weekend.. (sollie la no photo) So let me share with you on how to cook this French Cuisine
Ingredient:
3 tbsp olive oil
1 red onion (peeles and sliced)
2 cloves garlic (chopped)
1 capsicum aka bell pepper (cut into 5cm chunks)
1 zucchini aka Japanese cucumber (cut into 5cm chunks)
1 eggplant aka brinjal (cut into 5cm chunks)
4 tomatos (skinned, seeded and diced)
1 tbsp tomato puree
1 tsp sugar
1 tsp Herns de Provence (available at supermaket)
Salt & peppter to taste
Basil for garnish (optional)
Method:
1) Heat 1 tbsp olive oil in a pan, stor-fry onion and garlic for about 2 mins or till fragrant. Remove and set aside
2) In a microwave-proof casserole dish (with lid), add remaining 2 tbsp olive oil, capsicum chunks, zucchini and eggplant. Mocrowave on high for 3 mins
3) Take bowl out and stir in cooked onions and garlis. Add diced tomatoes, tomato puree, sugar, herbs, salt and pepper. Mix well. Cover and microwave on high for another 7 mins.
4) Allow to stand for about 2 mins in the microwave oven afrer cooking is done. Remove bowl from microwave oven, lift lid and stir contents. Except for the tomatoes, the vegetables should be tender but not mushy. Garnish with basil and serve hot.
Personal Note:
* Veggie must be well drained.. else the dish will be very watery
* it will taste better if to add potatoes and white mushrooms.... haha
